Bacon Wrapped Sausage Bite's

Yesterday was Super Bowl Sunday. We watched the game and ate some really good snacks! Even though the game was really disappointing due to the fact that the Broncos got smashed, the snacks were still awesome! Super Bowl Sunday is always a big deal in our house, and this year felt a little different because I just got home from a short trip, so preparing for game day snacks was a little rushed and unplanned.

I was still able to make the most delicious Super Bowl snack that I have ever had. They disappeared within minutes! This snack is so easy and is perfect for the meat lover, and picky eaters. I have both!

The sweetness from the brown sugar, gives the bacon an addicting flavor and the saltiness from the sausage makes this snack complete. I love sweet and salty:)

Ingredients:

1 pound bacon
2 packages pre-cooked smoked sausage links
1/2 cup brown sugar
Toothpicks

Per-heat oven to 350 degrees.
Begin by cutting the sausage into 1 inch pieces. Wrap a piece of sausage in a piece of bacon that is about 2 inches long, and secure with a toothpick. Place bacon wrapped sausages on a foil lined baking sheet. Sprinkle sausages generously with brown sugar. And bake for about 45-50 minutes. Remove from oven and transfer sausages to a serving dish.

Smoked Sausage Sauce and Fettuccine

We are a true spaghetti lovin family. It always brings my kids to the table.
Today is Halloween and before I start my day of pumpkin carving, trick-or-treating and cupcake making, I thought I might share with you all, my mother in law Ruby's Smoked Sausage and Fettuccine recipe. I usually make sauces on the weekend due to the time it needs to make a great sauce, but with this sauce, it can definitely be done on a weeknight.

This recipe is very easy because it uses beef smoked sausage which is already fully cooked and spaghetti sauce mix which already has wonderful flavors in that little packet like, cheese, parsley, beef and pork flavoring, paprika, onion, garlic, oregano and lots of other Italian flavors that make any sauce taste like you have been cooking it all day. So here is mama ruby's recipe and Happy Halloween everybody!

For Sauce:

2 tablespoons olive oil
1-16 oz package of smoked sausage links sliced
1 -12 oz can of tomato paste
1 small onion sliced
1/2 teaspoon minced garlic
1 packet Lawry's Spaghetti Sauce Mix
1/2 teaspoon salt
1/4 teaspoon ground black pepper
12-16 oz water

For pasta:

1 package of pasta noodles of choice
1 teaspoon salt
1 tablespoon olive oil

Directions for sauce:

Heat 2 tablespoons olive oil in a Dutch oven or large saucepan on medium-high heat. Place sliced onion in saucepan and cook stirring frequently until translucent and a little browned, about 2 minutes.

Add garlic, stir and cook until garlic and smoked sausage slices. Cook mixture on medium heat until sausage has browned a bit, about 3-5 minutes.

Add tomato paste and stir to combine. My family method is to fry the tomato paste for about a minute or two before adding the water, because that is what we do:)

Add water then stir, salt and pepper and stir, Lawry's spaghetti sauce seasoning and stir.

Lower heat to medium-low and cook stirring frequently for 15-20 minutes until sauce has thickened.

Directions for pasta:

Bring 4 quarts water to a boil, add 1 tablespoon olive oil and 1 teaspoon salt.

Add pasta noodles to boiling water and cook them according to directions on package, usually around 10-13 minutes or until al-dente ( cooked but still has a bite)

Drain pasta well and add a bit of butter

I usually serve this meal family style since everyone always goes back for seconds.

This sauce can also be frozen if desired, by placing sauce that has been cooled into a freezer bag and placing in freezer. Can be frozen for up to 2 months.

Defrost by placing bag of frozen sace in fridge to thaw overnight. When thawed, place in sauce pan and warm on low-simmer until warmed through, serve with pasta a grated Parmesan.

Let me know what you think?

Yummy Pumpkin Sausage Pancakes

Yay! Pumpkin season is here! I will be making all kinds of goodies and snacks
That involve Halloween and pumpkins.

I love Halloween. It is I feel my favorite holiday, because it is all about fun, food and dressing up!

I have always wanted to try making pumpkin pancakes and today I thought I might add sausage in the pancake as it cooks. It gave the pancake such a yummy goodness that my kids could not stop eating!

I can't wait for Halloween to get here. The eating, trick-or-treating, the costumes, It's the great pumpkin Charlie Brown!

So here is a great pancake recipe to kick off the month of fun!

Ingredients
1 3/4 cups milk
1 cup pumpkin puree
2 eggs
1 1/4 cups all purpose flour
1 tablespoons brown sugar
2 tablespoons granulated sugar
2 teaspoons baking powder
2 teaspoons pumpkin spice mix
1/2 teaspoon salt
1 teaspoon vanilla extract
6 links breakfast sausage

Begin by chopping up sausage links and cook in a pan on medium-high heat until
Browned, then remove from heat, drain fat and set sausage bits aside. In a large bowl combine flour, sugars, baking powder, salt and pumpkin pie spice and mix until well combined. In a separate bowl add eggs, pumpkin purée, vanilla extract, and milk, mix well then add wet ingredients to dry ingredients and whisk until smooth.

heat a skillet over medium heat. I cook in batches, by pouring batter by 1/3 cupfuls into skillet. I then place four or five bits of cooked sausage on surface of batter in skillet.  Cook until you see bubbles form on surface of pancakes and bottoms are browned. this takes about  1 minutes per side.

These pancakes were a hit with the family! The sausage gave the pancakes a salty-sweet flavor!
